Would I get away with these 27.5 x 2.6 tyres work on my 23mm rims?? Or would they just be rolling around all over the place?

I'm running 2.5/2.6 tyres on i25 rims, no problems. Not Vee, but Vittoria and Michelin.
Both of them have quite burly sidewalls, which I think makes a big difference. Lighter weight tyres would probably roll more.

Just because you can doesn't mean you should.

I'd stick to 2.4 max, based off my experience running 2.6in tyres on 23mm and 25mm rims previously.

My limited experence.

19mm rim on the front here.
Took off a 2.3 Purg Grid and mounted a 2.8 Michelin Wild AM. Made a huge difference for the better For a experiment I tried a 2.8 RocketRon with paper sidewalls. Terrible rolly and bouncy- as you would expect

Picked up some 30mm rims a few weeks back and sticking with the 2.8 Michelin. However if I was still on the 19mm, I'd still choose the 2.8 Michelin.

After much f**ing around with the pump - my optimums were:
19mm/Mich = 24psi
30mm/Mich = 18psi

I’ve got the 2.6x29 on a 30mm ID front rim. It’s great. However the wheel is not boost and there isn’t a lot of room inside the mudguard. I suppose in a narrower rim it would take up less space widthways
