Have become quite addicted to watching these recently... the problem is Red Bull TV only appears to have a few (full length) races currently up for viewing. Is there anywhere else to watch them?

it can take a bit of finding but most should be there on demand - it's a bit easier on the the TV app where you can search events, find last years xc and then view series which opens all years back to 2016....
