So finally going to try tubeless. Have some Crossmax and some UST tyres arriving tomorrow. An I right in thinking I don't need sealant? If not, anything I need to know with regards fitting and sealing?

You don't need sealant for them to seal. It's still worthwhile using some though.

Yes, that would be the air escaping from 'your' tyres...I haven't heard that sound for quite a while. ๐Ÿ˜†

Yes, best to use some so it will seal punctures from thorns and sharps etc.

you will also need some valves with removable cores.

washing up liquid in water, to lube it up and allow it to pop onto the rim nice and easy

Was using the response he gave me about using a dropper post!! Been tubeless for 7 years now myself!

You don't NEED valves with removable cores, I have quite happily gone tubeless with non-removers.
