Is it possible to get a puncture if you run tubeless?
If you do what do you do? I assume you can't just a stick a tube in?
I know the shop said their puncture resistant, but thats no good when your stuck miles from home!!
Yep, and yep
if you run tubeless with sealant most holes will seal themselves.
if the worst comes to the worst then remove valve/rim strip and fit a tube.
carry a bag for carrying the latex covered rim strip afterwards.
Sure you can get a puncture - latex will seal small ones but it's still possible to gash the tyre sidewall, **** the rim into the tyre bead with a heavy impact etc etc. Rare, but happens now and again. You need to carry a pump and spare inner tube - just remove the valve and fit the tube as said.

Can't I just chuck it in the nearest tree / bush / stream? (delete as appropriate)
just remove the valve, then find something to patch the inside of the gashed tyre (tangfastics wrapper!) and pop a tube in.
ride home with white fluid spurting from the gash till its all empty.

leaving 26" diameter bits of rubber band lying around the countryside is rather frowned upon...
Unless one regularly removes and inspects tubeless tyres for thorns, the odds are high that when you do, eventually have a puncture, inserting and inflating an inner tube will see it punctured immediately by the thorns ones not noticed going through the tyre due to the action of the sealant.
False confidence IMO. Better to carry some tyre boots, anchovies and a CO2 cannister or two (as well as a pump).
