I've got some ZTR Crests on order and want to use the Stans rim strip and stans latex solution stuff.

I love the old Nobby Nic and Racing Ralph combo so am looking at buying these (26 x 2.25). But...

Do I get the Evo, Snake Skin or Tubeless versions. Want to keep the weight down as much as possible, but not to the cost of possible failure.

Snake Skin if you want a bit of durability. The Evo ones have very weak sidewalls that go threadbare pretty fast. UST ones are a bit too bulky.
