It's obviously doable as it's been done plenty of times, but are there places enroute to restock with supplies and water?

Did it last year, west to east.

There was a tap behind an FC shed type building somewhere.. I think it was the Hafren Forest visitor center maybe; then there was Rhayader.. I think you could pop to Llangurig too but we didn't.

There's a drinking fountain opposite the post office by the village green in Llangurig that you could use

It's Wales. There's water everywhere!

You can carry all the food you need easily, I took water from the hafren ford which looked clean and didn't kill me and by the claerwen reservoir, but could have got some bottled water from Rhayader and llangurig instead. I was racing and it was a hot sunny day, you wouldn't need six bottles otherwise. It's a tough ride in one day and I didn't enjoy the last few hours at all so good luck!!

There is a Syclist Provisioning and Restocking centre is Rhayader, aka SPAR. I drank three camelbaks and some cans from the SPAR, but it was very humid.
