Simple really,

Fat bloke building a Surly long haul trucker...
Mostly a lazy road bike, but with occasional fireroad shortcuts...
How wide should I go on tyre size? 700c/35's ok, or go wider for fat ass comfort?

Schwalbe Marathons in 32mm would be my choice.

fat and comfy for me. touring is about teh journey not how fast you do it. I'll happily sacrifice some speed for comfort

32mm would be pretty much spot on for me. Road-wise, I'll use 28mm.

You don't really sacrifice much in the way of speed for width - not inherently, though slower tyres are often wider. The real question is how much clearance you have and what tyres you have to choose from. For mostly road, but some off, an inverted tread is good (though you may get away without much at all for fireroads in the dry - I've ridden my road bike with 25c slicks off-road enough).

I put 2.35" BAs on a 29er at the beginning of last year. My other road bikes have barely been used since.

Great ride, even better for downhills - plenty grip, and I don't notice any drag from the large section.

Mind you, I don't ride at speeds where aerodynamics come into effect - unless it's a headwind. ๐Ÿ™‚

I think I'm running 32 Gatorskinz. Fastish tyre, plenty comfy and no pun****es so far!

35mm Marathon Racers and 32mm Marathon HS368s worked well on my Trucker for a few hundred miles of towpath and gravel roads during past tours.

At 16 stone I find 35mm is the very comfortable for loaded touring. Going slightly wider gives slightly more comfort off road and also means less topping off the tire pressures as wide lower pressure tyres lose pressure more slowly and are more forgiving of reducing pressures. No need to go wider than 35mm/37mm.
