what are the draw backs of running an ultra short stem on an all round bike?

I've got 50 mm ones on both bikes, and there are no drawbacks at all.

that's it really, possibly might make you feel a bit cramped for longer rides too.

Used to run 50mm on my AM hardtail. Did get a bit wandery on steeper climbs. Moved to 70mm now and feels much better. Was surprised at the difference 20mm made.

Lack of space to mount a battery pack for a handlebar light (unless you get an all-in-one job)...
Can make the front-end feel very twitchy so slow speed stuff can feel slightly more nervous i.e. slow speed climbs where you want the front wheel to remain on a line but it's steep enough for you to not be going fast enough to allow momentum to keep the line itself...
Depending on the bike size and setup and how you a proportioned, you may feel like your knees are about to hit the bars...
