Techy question for you - if I use a middle 32t chainring from my XT chainset (which I assume is 5/64 width) and a rear gusset double six 18t cog (which I think is also 5/64) does this mean I can only use a 9 or 10sp chain and not a dedicated 1/8 or 3/32 singlespeed chain?

Probably, but TBH you're better off with a 9 speed anyway.
It'll work fine with a dedicated SS chain. FWIW, I happily run a deore 32T front ring, 16T wide base SS sprocket and SRAM PC1 1/8" chain.

Get a KMC Z610 RustBuster chain in 3/32" and it will work fine as well as last ages.
By the way, 9-sp chain is actually 11/128".
CRC sell them at wildly varying prices...I have bought at £2.80 and much more...

Ideal you should use the right width chain, and ideal the wider the better. Most people end up running 3/32 gears and KMC chains as they last longer.
