I'm building a singlespeed that I can leave locked up without worrying about too much. The wheels I'm buying are standard QR but I"d like to swap to traditional bolt through or some type of secure QR's??
What are my options?

Halo's hex-things are good. Lighter and IMO more secure than even a really good QR, as long as you don't overtighten them anyway.

Was going to suggest pinhead system but have you seen the price of them now £100 on CRC. I'm sure they used to be £40ish and that was about 3 years ago. I've got a set, they are good as you get all round security.
