Sorry being a little bit lazy, what is the difference between a standard stem and an oversize stem.

The clamp diameter of the bar.
Standard = 25.4mm
OS = 31.75mm (or 31.8 or 31.6) ish

IIRC it started around 1999 on road bikes and has gradually become more popular off road.
I use OS on road but only on one of my mtbs and only then because I got a bargain carbon bar that was OS.
