The DT is a fair bit heavier - does that make it stronger? Anything else to consider?
I liked my previous Flow 3s but they haven't been completely indestructible under my heavy and clumsy riding...
...maybe I should grit my teeth at the extra weight and get an FR560?
If I was feeling generous towards the Mk3 I would say its comparable in strength to an XM481, not an EX511, to which its also very similar in weight. The EX511 is a totally different league.

Does the lower profile of the stans means it pinch flats less? (still on tubes here)
Not really - there doesn't seem to be an upside as far as I can tell. If you're still on tubes I might consider the XM481 + tannus inserts. It seems like a pretty good system and isn't stupidly priced like some of the tubeless inserts.
