XT discs, really loud!! just started in the last few weeks

Pads look pretty worn but not worn out will probably replace anyway, anything else to consider?

Cheers

Contaminated disk.
Loose bolts on the mountings.

Clean the rotor, sling in some new pads and see what happens!

when you're out riding stuff some wet mud into the caliper.
it works, trust me.

If the brakes judder and make a horrible squeal as you roll to a stop, they are contaminated with oil. Clean the disc with IPA or glass cleaner and put the pads in the dishhwasher. Then look for the leak.

It stops well, neither lever is spongy - but both discs are as equally bad in terms of noise.

will give the rotors a clean, i assume by IPA you don't mean a pint of Greene King?

Muc-off disc cleaner on discs and pads. Repeat every few rides

If all is performing well, and it's simply noise that's the issue, find a nice long bit of gentle downward tarmac, get some speed up and burn them in.

Def not Greene King it's only good for swilling drains out.

My XT brakes squeal very loudly in the wet, but are fine in the dry. Any ideas?

tighten all the bolts up, stuff mud in the caliper.
