Boss lady would like an e bike. Not for crazy riding. Peaks loops and stuff like that. Odd trail centre reds. Thinking full suss more for comfort than anything else. Now only being 5’ and a 28” inseam, small bikes are proving a little hard to find. Trek was the initial favourite but too large. Tried Giant,Scott,Cannondale all too large. Specialized Levo Turbo might “just” do. Anything else worth looking at?

Canyon Spectral-ON WMN in XS is actually quite small
https://www.canyon.com/en-gb/mtb/spectral-on/spectral-on-7-0-wmn.html

if stand over is still a little high and there's minimal room for a decent length dropper, putting 26" wheels on it and shorter 155mm cranks will give it an ectra half inch room on either.
It'll still ride nicely.
