I have a 165 mm rock show which apparently has a stroke of 38.5 mm
Had a look at Fox and their 165 can come with 40 or 42 mm stroke.
Is there any reason I can’t go with the 42mm shock? Why wouldn’t any shock manufacturer just make the shock with the longest stroke possible.?
Surely more is better?

Depends if tyre (or something else) fouls on anything on the additional 4mm shock travel that the bike hasn't been designed for.
