What size rotor are you using. I think the standard is 140 but you can put 160 on if you want. Just ordered the levers and calipers but need to get the rotors ordered.
I'm using 140, not had any problems. Went down chimney bank hill in the moors expecting them to boil, but not a problem.. because on my wheel build I have an ice tech on the back and a six bolt trp 140 on the front!
Plus I weight a bit!!
A few years ago I had a cyclocross frame that I built up with straight handle bars which allowed me to use XT MTB hydro brakes with 700c wheels. The wheels were built around Hope Pro II hubs. I've now switched to drop bars with RS685s and have always run 160mm rotors, with no issues.
I guess using 140mm rotors just brings the caliper closer to the hub/spokes. I'd expect any bike specifically designed to be road disc compatible would ensure sufficient clearance for calipers on 140 rotors.
Also, if the frame is designed for direct mount calipers and 140 rotors, then you'll likely need adaptors to mount the calipers for 160mm rotors.
The slightly increased stopping power of 160mm rotors may be good to have in reserve.
160 F&R - it's more about heat management than power IMO. If you're light or don't ride big descents then 140 is probably fine.
Maybe I'll go with 160 then. I'll be doing a few alpine descents in the summer with a loaded bike so a larger rotor may help.

Never had a problem, lots of riding round decent sized hills of the North Pennines and Scottish Borders, with audax/light-touring loads.
160F/140R on the best roadie and
160 F&R on the commuter
