I want to change my old IS mount M975 xtr calliper to a newer post mount M765 XT calliper does anyone know if it would be compatible with my XTR lever?

As long as they both use mineral fluid should be fine.
I'm using deore levers with magura julie calipers.
Think of the hose as an adapter
