What do all the numbers mean then? Some are EN, some are ES etc.

Letters are used to denote axle system eg octalink or square taper, numbers denote groupset hierarchy eg deore or slx.

N is usually Square taper, S for Octalink
Numbers wise 3 for Alivio level. 5 Deore, 6 lx/SLX?, 7 XT, 8 Saint?, 9 XTR
So ES71 68/113
means the frame width is 68, axle length is 113 Octalink XT level

UN is tapered and ES (Eight Spline) is Octalink. The higher the number the higher the quality.
