Do they only come in 10 speed? Can you get them in 9?

10 speed only. Although they can run 9 speed using a Shimano mech, a SRAM shifter and a bodge.

Sorry if this a stupid question but have Shimano now gone to the same pull ratio as sram then?

Works a treat does the 9 speed fix, only let down by their shifters
