Does anyone know if you can use a Saint M820 rear mech with an XT M780 rear shifter?

If they're both for the same number of gears yes.

Any 10sp shimano MTB shifter is fine with any 10sp Shi,mano MTB mech - only mixing road/MTB or Shimano/SRAM causes problems.
