Off road I usually stick with a Fizik Gobi, but riding on the road where there is much more sitting in one position I feel that something with a cut-out might be more comfortable. Have tried a Selle Italia Gel Flow but felt perched on the top rather than sinking into the saddle. Any suggestions for a Gobi style fit with pressure relief?

Get your sit bones measured ( a Spesh or Bonty dealer has the relevant arseometer) & look at saddles the correct width.

I felt the same as you on the Selle Italia C2 but the SL models are a better fit for my butt.
