I want to replace my avid rotors with something different, however all the ones I like are 180mm and avids are 185mm so will the 5mm make a difference in pad contact and performance and b, are avid rotors nearer 180mm but are measured differently thanks

If you can, try some rotors AND mounts.
I seem to remember that the mounts go with the discs so a 180 mount should put the caliper somewhere near the right position. You can then tune position using fatter/thiner spherical washers off any old Vee brakes you have or by filing down the mount where the spherical washers sit.
Just keep monitoring where the pads are relative to the disc.
