I recently completed the Fred Whitton on my Canyon Lux. To be honest I thought it was a good machine for the job. I was in relative comfort when I finished, the roads were truly awful in places and don't think I would have relished going over them on a road bike. I'd like to try installing a dedicated road tyre to see if there is a noticeable difference over my road bike speed wise as a little more comfort and less beat beat up at the end of a ride would be welcome. I'm no pro and certainly not a racer and I only average around 16mph on my road bike so dropping to something like 13mph is no concern.
Like to go as low as a 32. Can you squeeze a 700 over a 29er rim? What dedicated road 29er tyres are there?

I usually run a generic commuter tyre. Search on ebay for Hybrid tyre

29er [i]is [/i]700c, they're one and the same. Ergo any 700x32mm tyre will work.

I have a pair of AM Classics I couldn't get anything vaguely roadie on. And that includes 32mm tyres. Split my fingers trying. My top tip would be to make sure that anything you do try is a folding tyre as they are that little bit easier to get on.

Only insofar as 23mm tyres will be an odd profile on a 35mm wide rim. There's no inherent reason you couldn't get any tyres on AMC rims. Folding isn't necessarily easier either. Hutchinson are usually quite loose, but a stiffer (ie tougher) tyre will be tighter.
No difference whatsoever between a 29er wheel and a modern, wide, 700c road rim in terms of size so you can run whatever you like. If you have a super-wide (27mm+) MTB rim it'd be a bit odd (and possibly not very safe) with a narrow (<30mm) road tyre, otherwise fine.
But do bear in mind BB height - going from a 2.25" MTB tyre to even a 35mm road/hybrid tyre will drop your BB over an inch and pedal-strike may be an issue.
I'd go for a nice wide (35-38mm) folding touring-type tyre if I were you - Schwalbe Marathon Supreme or Panaracer Pasela, for example.
