My wife's road bike has Shimano 2300 on it (8 speed with a square taper bottom bracket) and it must weigh a ton. I can find a good price of 105 (5600) chain set.

Can I just fit the new chain set? Do I need to swap the rings over too? Or, am I asking for trouble?

It should swap over OK if it's the same type.

There are likely to be cheaper ways of saving weight on the bike, though they won't look as cool.

I've already upgraded, wheels and tyres. Well I say upgraded, she decided she wanted the wheels of my road bike 😯

105 triple chain set is only £65 and I can't think of a bigger lump of metal, but open to suggestions.

You could always google the bits and see what weight saving you will get. Sorry, I'm not doing that for you.

You can consider this too at only £65 new...comes with a BB that fits 68 and 73mm (unlike 105 at 68mm only).

Mine weighed 908g complete and is the set without the chainguard.
This compares with 853g for XT (alloy bolts and alloy granny) and 900g for SLX triple.

chainring spacing on a mtb triple is not the same as road triple; in practice many find it works but it is not intended to.

is it triple at the moment?

Yes, it's a triple.

My understanding of MTB chain sets is the chainrings got thinner with 10 speed (to work with the super narrow chain), but the ring spacing on the cranks remained the same. I'm not so sure about road stuff though.

Stick with road chain sets if your can.

Chainrings are in different places and Q factor is roughly 18-22mm narrower on road cranks.
