Hi - can anyone give reccomend some areas for some VTTing around Pezenas/Lac Salagou way?

You could start with Salagou and Pezenas, both FFc VTT Centres.
Some nice riding round Salagou, there is some GPS files on www.utagwavtt.fr.
Head further inland and you are in the Tarn, loads of stuff there as well.
