Does anyone know if a XT 760 freehub is interchangeable with a XTR 960 freehub? The XTR freehub is £100+
I've got an option for a complete new 960 hub for £70, so that may be my best option. Or is there any other alternative to the XTR freehub?

Complete new hub, no doubt about it, particularly if it comes with a skewer.
Mister P is the man who will know, but I don't think they are cross-compatible anyway, there are few combinations that are!

Nothing else fits as far as I know. I would buy the complete hub and overhaul yours with all the bits from it.
