Think the GF won't need 125mm drop, plus Reverb collar and fat saddle in her new frame. Thinking all that is 20mm too much for her inside leg.

Is there a way of reducing the travel on a Reverb?

It's currently 125mm. 100mm drop would suffice.

Maybe I missing something, but why not leave it as it, but don't use all the travel?

^^ surely the idea is that the height is always correct for climbing, not up and then down a bit. No?

Ride it for a couple of weeks and it'll sag 20mm when you sit on it 😉

I think the op has the reverb inserted all the way and the seat is to high. Correct?

Ghetto, but don't some people use a cable tie or similar to limit travel?

Not pretty but I suppose it does the job?

Tie a piece of string/wire below the collar and up too the seat clamp, to stop it extending fully.
