Any recommendations for wheel building? Or any definite to avoid?
Looking at CRC - assume they're OK?

Matt at 18 for me every time. I know there's others who are good too.

I have two set of wheels build by him. Both have been totally trouble free. Both have had a lot of use and abuse. My main ones have done 20,000km+ Mainly on a rigid hard tail, often loaded with bikepacking kit. They've been checked by him several times during servicing at my request - never needed any adjustment at all.

He builds them properly first time

Moonglu are very good, my ProII on Arch EX's took two years of abuse on a hardtail followed by another 2 on a full sus before needing a bit of a true and being told the rim was looking a bit knackered! There still being used on the wife hardtail, though she did snap a spoke riding down the road last week!

+1 for moonglu in Ripon. I've had a set of flow ex and arch ex from them, both on pro2 hubs. Still running true after 2 years of hammer.
