My screw-on White industries freehub has lasted years so get a rear wheel with double sided thread, then you could have a 16t on one side for general riding and an 18t for long hilly days.
Or hope make a singlespeed hub.

Oh and get a singlespeed specific chainring which has longer teeth as I've been thrown over the bars when my stretched chain has came off, an on-one stainless on lasts years.
