I want to replace my rims on my mtb. I have some spokes that you can't buy anymore, can I get the rims replaced and keep the original spokes and hubs?

If the rims are the same depth, yes. It's pretty straightforward. As long as the nipples aren't seized or anything.
You might well be better off changing spokes too though, as they will eventually start snapping and you'll have to get it rebuilt again then.

Spokes have a tendency to snap if re-used. I've done it, but 2 out of the 32 snapped during tensioning and needed new replacements which was a pain to back everything off and re-start tensioning.
