What size of cog defines the length of the rear mech? Thinking XT

not that simple, what you need to know is the difference between the biggest and smallest chainring and the biggest and smallest sprocket.
In reality just pick a mid length rear mech and should be good to go. You don't really need a long cage mech.

If its 2 rings up front a medium is all you need. If its a triple upfront you will only really need a long cage if you plan on going largest ring at front to largest 2-3 rings at rear, you shouldn't really be using these gears so as above a medium caged mech should do you.
