Just about to buy a new bike frame and need some new wheels to go with it. I'm after a rear hub (135mm qr) that's as quiet as possible. Currently I have hope Pro II wheels and frankly, I'm embarrassed by the racket!
Any idea on what's nice and quiet?
All Shimano tend to be.

It does, but if you go too thick or too much, the pawls won't engage properly, and it's only a temporary fix as the bulk of the grease will be forced off the contact points, and you'll just be carrying a bunch of redundant grease around.
Use the right grease and embrace the noise!

You can have my old hub set for free if you pay postage, they are pretty quiet.
Onyx racing do a silent, zero drag, instant engagement hub in a massive range of colours. Pricey, but looks like a great bit of kit.
Easton EA70 hub (that came with the wheels) is totally silent. Great until people can't hear you coming.
