Got a trip planned in early June and I might take my gravel bike (Diverge with 47mm tyres, disc brakes and dropper post).
I'm not planning on bike-packing so not interested in mega long point-to-point rides but instead I'm after some max 4hrs/max 1200m climbing sorta routes. I'll be solo so should avoid anything mega technical though I'm a pretty competent rider (even if I say it myself).
No objection to some tarmac.
Would like epic scenery - don't really want to be stuck riding in trees all day.
France, Spain or Andorra.
Will have a car to hop around but likely to restrict myself to central and eastern region as I gotta do some beach stuff in S.E. France as well as hanging around in Girona for a few days.
I'm aware there's a risk some of the highest routes will be snowed in so I'll keep an eye on the weather.
I'll be flying into Toulouse if that makes any difference.

June you're unlikely to have snow anywhere. It was all gone (up to 2800m) by end of April last year - and we've not had as much (so far) this year.
Plenty of big days out on fire roads/singletrack. Just be aware that any main roads (Route National) that cross the mountains/borders will be busy with traffic and sometimes they can't be avoided. Plenty to play around with, though. Girona is gravel central these days and there's a bunch of trendy shops and organised rides there. If you're over near me (Fuilla 66820) I can give you some pointers.
