Can I just use my contactless Visa card on everything then and not bother with an oyster if I am only in London for a few days ?
Probably want to use the boats and stuff

absolutely, it used to be that daily usage wasn't capped with a contactless visa but now it is at the daily travel card rate, just make sure you use the same card every time

It's actually capped across the week now on contactless cards.
If you're travelling for work then you still get journey history too (for claiming expenses), just get an online account and register the card to it - https://tfl.gov.uk/fares-and-payments/contactless?intcmp=8257
