The bumph on teh web is not clear - which come with a bladder?

YES - the Raptors do I can say as I just got one. Comes with one of these:

Depends...Raptors do, Talons don't.

Raptors and Vipers do, Mantas do, Talons and Escapists don't, despite the Escapist being a bike-orientated pack.
Anything listed under 'Hydraulics' includes a bladder, see:
