If I'm using a Stan's tubeless kit or similar with presta valves, but the rims are drilled for Schraeder valves, will this work, need some bodging, or be totally hopeless? One rim still has the grommet to hold a Presta valve if that makes any difference.

I tried all sorts, presta valves popped right through with the pressure, got Schrader to presta adaptors, couldn't screw the valve of just rattled loose, trued some Schrader valves wouldn't fit due to the rim shape.
In a word I wouldn't bother.

Stans NoTubes Rim Strip For Freeride All Mountain & Flow Rims could be an option. They have a Schrader valve in the rimstrip. However the strip is designed for wider rims AFAIK.

Stans rim strips work perfectly fine in Schrader rims, I've run one in a mavic 719 for years. If you're just taping up the rim, a quick google found these: http://www.chainreactioncycles.com/no-flats-tubeless-schrader-valve-kit/rp-prod94761
