Anyone recommend me some low profile mud guards for my gravel bike?

I'm using SKS Commuter guards on my GT Grade, just enough room to fit them with 35c gravel tyres on my bike (your frame/forks may have better clearance) although I cut off the front part of the front 'guard as I was concerned about mud clearance around the fork.
They survived the Dirty Reiver last year just fine.

SKS Chromoplastic P50 (50mm width) cover the 700 x 47 front / 42 rear Smart Sams on my commuter which gets chucked around the local tame trail centre. Yes they’re occasionally noisy with the stays hitting the tyre but they’ve been without a problem in years and 1,000s of miles of use.
