Chilterns has loads plus you've Chicksands not far.

There are some trails in the Whippendell Woods, across the canal from Cassiobury park. I don't know it well at all, but part of it is a SSSI, so be careful where you ride.
To the north east of Watford the area bounded by Bricket Wood, Aldenham and Radlett has a few nice bits in amongst the bridle ways and farm tracks.
Yep there are some short but fun trails in Whippendell woods. Nothing is marked and you really need some local guiding to find it all. Best thing is to stick to the main paths and investigate any gaps in the bushes.
Otherwise you have the Chilterns not too far away and Aston Hill if you fancy some DH action.
