I was in Tweeks Cycles yesterday and noticed that rear cassettes on new MTB's are massive with small chainrings on the front ๐ฏ so why the change in chainring & cassette size's other than making climbing easier.

2 x 10 with larger cassette and smaller rings to get the same range of gears?

The average mountain biker is getting older and lardier and 'effort' is out of fashion these days.
