Currently got a Ridley cx bike but cassette is 11-25, and want more teeth do I have to get a road cassette or could I just get an SLX or XT 11-32?

So long as your mech has the capacity, fit whatever you want they're all the same.
Obviously you've got to fit a 9spd with a 9spd and so on. And shimano / sram on a shimano / sram compatible hub etc
