These are old hat now - is there likely to be any way to get the pedals to work with a modern head unit e.g. Garmin?

Sorry. I have nothing to add, except that I opened this because I was so surprised to see @molgrips mention Look Keo pedals.
Next he'll be a Campag user, and joining my club!
