Ideally with rack mounts, non boost and 29er to use as a winter trainer for mix of road gravel and MTB but also a bit of touring in summer.
What's out there ??

I use a Brother Big Bro for exactly that. Does a nice singlespeed too 🙂

Specialised Chisel, use it exactly what you describe (but no rack mounts). Mine is running carbon forks. Might be for sale so I can indulge my Stooge fetish again 🙂

Giant talon? Has rackmounts and dual bottle cages. Swap out the budget build kit.
