They're XTR M975.

Can it be replaced, is it a difficult job, what's the best way to get the old bolt out?

If there is enough head exposed you could try a hacksaw blade to cut a slot in the head and then use a screw driver.

If not drill and use a ezy out.

Try a brand new allen key first, you might get away with it.
