Just fitted a pair of Hope M4's and tried to use the mount that was fitted with the Avid Juicys but I'm pretty sure its not correct as the pads arent fully over the rotor. I'm running a FOX F series fork and a 183mm rotor.

I think the avid adapter you have should work.
On my old juicy's, there were spacers between the caliper and the mount.
Make sure there are no spacers when fitting the Hope caliper.
Tried to use an Avid 185mm adaptor on a Shimano caliper last week, but it seemed as if it's mounting faces weren't in line, and wouldn't allow the caliper to sit correctly. Probably best to use the correct mount that you've shown there.
