Will 5mm difference of internal width of wheel rim make much difference to tyre profile?

From what to what? If we are talking 17-22, then yes. If 27-32mm not so much.

Also depends how fat a tyre you're intending to mount on said rim

Well I’ve been running 2.6’s al year with no issues, but I feel the profile is quite round. Have chance of some 30mm rims, but not sure if it’s worth changing.

Not sure I’d bother for internal width alone, esp if I was happy with them, maybe if there was another reason to get the rims, eg lighter, stronger, blingier etc as well. What are you going from and potentially to?
