We've done the tyre valve thing, so let's here it for your favourite hydraulic fluid.

Why are there different types, what are the pros and cons of each, and is it only Shimano that use mineral?

AP Lockheed ultra 5.1, slightly less chance of boiling the brake fluid on the once a year trip to somewhere steep!!!

I have got air brakes and an exhaust brake on my wagon and they have never boiled. Its about time Shimano developed air brakes putting the compressor somewhere could be a problem though

Ive just bleed my Hayes strokers with Halfords Dot 5.1, I'm just back from a wee Urban spin around the city to try them out, very impressed with the difference, I can feel more modulation and crisper braking.

The manual says I should use dot 4, Ive chanced Dot 5.1 to see what happens, I think so long as you flush out the old stuff properly every thing should be fine.

Stendec Synthetic 5.1. No boiling alpine issues. top non corrosive stuff.
