I'm thinking of a putting a bike together hopefully by May. I've not decided on a frame yet but it's most probably going to have a boost spacing. Are there hubs available that you can just add a spacer to to fit a boost frame and
Do I need to know what cassette I'm going to use before I order the wheels because of the driver needed?

Not really, and yes, but you can change the driver at a later date.
