Just bought babybgoode his first ‘proper’ bike so going to be taking him up to Greno to do some of the very easy trails etc.
This of course means dusting my ride down which I guess is deeply unfashionable.

I've also got a Bontrager Race if I'm feeling really retro.
I'm riding a rigid steel hardtail with a 3x9 drivetrain (XT Octalink hailing from around 2003 I think), straight steerer, QR wheels, flat pedals, bar ends and 690ish mm bars. I upgraded to a 29er last November but prior to this was riding 26" wheels.
In a nod towards modernity I recently went tubeless!
If the thread title was "How unfashionable are you?" I'd have to own up to wearing cycle clips.

Mine is bang on trend at the front and gets progressively dated towards the rear.
Tapered steerer forks, 27.5+ boost front wheel, 3”+ tyre, 50mm stem, 800mm bars.
Rigid 27.2mm seat post, single speed, 27.5+ rear with 3” tyre, QR rear hub, and a Brooks saddle.
Got to keep ‘em guessing.
Sorry to be a let-down but I've ditched the dinner-plate of a triple (48/36/26) on my 26" commuter and replaced with a 38t narrow-wide, but it's still 9 speed. Decided I didn't want chunky ergonomic grips any more either. Mudguards are in shed until the Winter. It's got a dropper post too. And rigid carbon forks after lack of maintenance of the suspension forks killed them. Also replaced the antique 12 year old Deore hydraulics with SLX. I actually prefer it without the triple and when I ride my (2012) FS with a triple I get confused and change gear instead of dropping the saddle.
As OP, but not posh enough to have a dropper post! Unfashionable enough to use a Brooks B17 but don't care because I can ride all day and walk straight afterwards. 🙂 On-One Mary bars too... don't plan to change much for a few years yet but might try the Stooge Moto bars now that they're available again.
As OP minus dropper plus rapid rise and onza spd pedals and to further alienate people I cracked and got an ebike as well and I just donated my bar ended 8sp gripshift marz zokes fs to charity

Brooks Swift Ti on mine - bought back in the day before Brooks became hipster.
All my bikes have Brooks on them for exactly the reason you mention.
And yes, in answer to someone else above. Good old fashioned QR’s. Forgot to mention square taper B.B. as well. Threaded-not press fit.

The most retro thing in the shed are a couple of Spesh 26inch Hardtails my wife and one of the offspring haven’t ridden for years. I might have a 90mm stem somewhere.

Me too, with unfashionable RF C/S & BB and eggbeater pedals, Panaracer tyres, 600mm bars and Onza bar ends.
It climbs like a monkey compared to some bikes I've ridden recently.
Not at all really. I sold out and jumped the shark and am now (currently) enjoying a (v. cheap, second hand) 2016 Cube Stereo 140. I suppose it's unfashionably common, or is common fashionable now? I dunno. It's fun, regardless. Bikes, innit, just go for a ride.
I can not remember what happened to my Scary Fast gloves, they were awesome.
And on the HT, everything is out of date. 95 DBR Axis TT.
