Not been to Lee Quarry yet but Gisburn is probably about 3 hours maximum I would have thought. There are a couple of sections that are fun to 'session' like the optional black bits.

both doable in a day. start at whichever is closest to home, do one in the morning and one in the afternoon it'll take about 45minutes to an hour to get between the two. A lap of gisburn took me 2 hours yesterday at a relaxed pace, don't know about lee quarry i've not ridden there yet, but i think it's more compact so you can do numerous different bit's.

I'd do Lee Quarry first while your're fresh, much more technical with a greater chance of point if you get it wrong. Lee Quarry red is about 4km, so not exactly epic. Could spend some time sessioning the black.

Spot of lunch, 45 mins to Gisburn (makesure you know where you're going, it's not a straight forward route. 2 - 2.5 hours around Gisburn and you're done.
