Looking for a bike rack for giant roam 2 so I can attach my panniers to them. I can’t work out what will fit any ideas or help ?

That looks like an entirely standard diamond frame that any 4 point rack would fit. With the brake mounted on the chainstay, I don't think you'd even need a disk specific one.
On the seat stay/dropout rack mounts on some racks its extended out a bit to accommodate discs. I'll see if i can find an example

Topeak explorer 29er disc compatible. As you can see on the legs they extend out, giving room for any disc caliper.
This isn't going to need the extra width of a disk rack.
Next/other bike might, it's nice to have options. If you've got remotely big feet, get a rack with struts that extend rearwards more than the one above. You can shift the panniers right back without compromising the stability too much. Something that looks like this:

My compact rear gravel bike needs the panniers mounting as far back as I can, and even then there's about 1cm clearance from heels to pannier...
Giant's own Rack It rear rack should do the job.
Standard equipment on my wife's Tough Road and I have also used it on my Revolt Advanced and Sonder Broken Road without any issues.
Best rack I've ever used, and I've used many across lots of bikes.

I see there is a lite and a standard one.
Got one of these on my Giant Talon - was easy to fit and looks sturdy, not used it with panniers as yet -
